Super Bowl LIX (definitely laughed while typing lix) is coming up quick! This year, the big game is Sunday, February 9th. When I say I'm excited for it, what I really mean is I can't wait to eat food and drink beer with my friends. So, I've been brainstorming party food ideas for the last few weeks.
Full transparency, I've been on a pickling kick lately. Did you know you can quickly pickle veggies with little to no effort and little to no time? Me neither until I finished the last Grillo recently and wondered what would happen if I reused the brine. Turns out, being cheap and lazy pays (sometimes). I sliced up a few mini cukes and jalapenos, tossed 'em in, and they were pickled to perfection the very next day. Highly recommend!
Next, I thought hard about what to do with the tiniest pickles I've ever seen — and thus, this recipe was born. Embarrassingly (but also proudly), I squealed with excitement over how cute the first lil burger I assembled came out. Making dozens more was certainly a labor of love, but zero regrets. If I did it again, the only change I might make would be to add tiny slices of cheddar or pepper jack.

Ingredients
For 16 mini burgers, you will need:
Tater tot buns:
Teeny tiny burgers:
- ½ pound ground beef (preferably 90/10 blend)
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and pepper to taste
For toppings:
- Lettuce, torn into tater tot-sized pieces
- Mustard of choice
- Mini cucumbers, sliced and pickled
- Red onions, sliced and pickled
- Jalapeños, sliced
- Cherry tomatoes, sliced
Preparing the tater tot buns
Preheat the oven: Start by preheating your oven according to the instructions on the tater tots package.
Bake: Bake the tater tot discs according to package instructions, until they are golden brown and crispy on the outside. Don't forget to flip them halfway through for even crispiness.

Cooking the beef patties
Prepare beef: While the tater tots bake, add ground beef and seasonings to a bowl. Use your hands to mix well.
Form the patties: Divide the ground beef into 16 equal portions. Roll each portion into a ball, then gently flatten to form patties. I made mine about 1/4" thick and 1 1/2" in diameter. Remember, they'll shrink up when cooking!
Cook the patties: Heat a skillet over medium-high heat. Cook the patties for about 1-2 minutes per side, or until they reach your preferred doneness. Mini burgers will cook much faster than regular-sized ones, so keep an eye on them.
Rest: Set cooked patties on a paper towel-lined plate to absorb some of the grease prior to assembly.
Assembling tater tot burgers
Now that your buns and patties are ready, it's time to put it all together!
Base layer: Begin with a tater tot disc as the bottom bun.
Layer the goodies: Recommended order (bottom to top), add mayo, pickled onion, lettuce, beef patty, pickled cuke, and sliced cherry tomato. Feeling spicy? Add a pickled or fresh jalapeno slice for a kick!
Sauce it up: Squeeze or spread on a dollop of ketchup and mustard.
Cap it off: Finish with another tater tot disc on top of your creation! Secure all your layers with a toothpick.
